Restaurant Trey is the new solo venture from head chef and owner Bryce Reynolds, a local chef who started his apprenticeship with EXP, was head chef at Coquun, and worked in other well-known restaurants in the Hunter Valley and Newcastle.

Bryce prides himself on everything small business and boutique, from the local food producers to the wine makers and beer brewers. He has always believed that small local suppliers show more dedication and passion for what they produce and, so, is always on the hunt for the hidden gems in and around the Hunter Valley. He also, regularly forages for wild Australian ingredients whenever possible, to add that special touch to the dishes he offers.

Restaurant Trey presents a refined dining experience which offers a two course option through to a five course degustation with complimentary house-made bread and the choice of matched boutique wines produced by Emma’s Cottage Vineyard. Restaurant Trey takes its name from Bryce’s eldest son and provides the opportunity for Bryce to showcase and pursue his food philosophy, which has always been ‘fresh is best’. For this reason, he makes the majority of his products in house, from house churned butter to fruit conserves and sublime sauces to accompany his dishes. A couple of the dishes on Restaurant Trey’s menu, which are highly recommended include, the house-made Black garlic and Mushroom Tortellini with a Sage Butter Emulsion and Bryce’s signature dish of Crème Brülée VS Crème Caramel.

Restaurant Trey is located inside Emma’s Cottage Vineyard at 438 Wilderness Rd Lovedale and operates five days a week with lunch from Wednesday through to Sunday and dinner on Friday and Saturday nights. Bookings can be made via telephone on (02) 8328 0503 or through their Facebook page.
